More time in the bottle is probably best
Nothing so exceptional there… But then the spirit was aged for almost five years in Jerez de la Frontera

giving a corner of each one-tonne fermenter the classic foot-stomp treatment before sealing it up for some carbonic maceration magic

Darroze 1983 Bellair GBA 50% 700ml domenica More time in the bottleGold color, intense. Brown reflections. The nose is marked by the long aging: cigar box, leather, licorice, nutmeg, toast, gingerbread, and toffee. However, the nose stays fresh and light. We find these balsamic aromas, licorice, and chocolate on the palate with a more spicy finish: white pepper, and candied ginger. Nice length in the mouth.
